Help! I’m Being Held Hostage by a Vegetarian.

It’s kind of true. My daughter has decided to become a vegetarian. So the conversation this week has been, “What do you want to eat?” She replies, “I’m not hungry.” Or “I ate a piece of cheese.” Darling daughter, ice cream does not count as a meal. Sorry.
Obviously, she has not done much research on being a vegetarian. She has been told various times that she needs to eat protein even if it isn’t meat. I’m not sure if she will like tofu. We’re going to try hummus tomorrow. It’s going to be an adventure for mother and daughter.

I tried to give up meat. That darned BBQ is addictive and I couldn’t do it.
So for the rest of the summer, we’ll be trying new vegetarian recipes. Pinterest is a great resource for meatless meals.
So to appease the new vegetarian, I made a smoothie. My kids asked me what was in it. I didn’t tell them everything because they would never drink it. But I’ll tell you guys. It was pretty good. I’m on my way to being a Smoothie Queen.

Super Secret Smoothie
3-4 Tbsp Plain White Yogurt
1 Banana
3-5 Strawberries
1 Kiwi
1/2 cup Broccoli
2-3 Baby Carrots
2 cups Apple Juice
1 can of Diced Pineapple – put the juice in too.

Blend it thoroughly. Margarita glasses are optional.

  1. I have made some tofu and goat cheese tacos and they were good. And the leek tart was pretty darn good. It’s hard to find good and easy to make vegetarian meals, but they are out there. I try and do a meatless meal once every week or so. And we seldom do red meat, but lots of fish, chicken and turkey. 🙂
